The Chicken Dish
Ingredients
500g chicken fillets [thigh or breast]
150ml tomato sauce
½ cup brown sugar
2 tsp vinegar
3 tsp prepared mustard [I use some smooth and some wholegrain]
1 tbsp worcester sauce
1 onion diced
Tip: Double or even triple ingredients [except for onion] for larger quantities of chicken. For 2.5kg chicken thighs I tripled the sauce.
Method
Place chicken in baking dish, single layer preferably. Combine ingredients and pour over chicken. Bake at 190° celsius for at least 1 hour. If meal is delayed turn heat down to 140° and continue cooking for 2-3 hours if necessary — it will still be absolutely delicious.
Even the leftovers are great on sandwiches!
