Chicken & Spinach Spaghetti
500g skinless chicken thighs
150g young leaf spinach
125g mozzarella ball
250g spaghetti
400g tinned chopped tomatoes
garlic
salt &
pepper
1. Heat pan with 1tbs olive oil
2. Add chicken to pan, cook till brown, leave aside to cool
3. Cook spaghetti following pack instructions
4. Once chicken is cool, shed into bite-sized pieces
5. Drain the pasta, stir through the tomatoes and garlic (to taste)
6. Add the spinach and chicken, stir through and leave for 5 minutes for spinach to wilt
7. Drain the mozzarella ball and tear into pieces
8. Serve the pasta into four bowls, sprinkle with mozzarella, and salt and pepper
9. Enjoy!
