Hot Cross Buns 

Crosses

2 heaped Tbsp self-raising flour
2 Tbsp cold water

Glaze

1 tsp gelatine
150ml water
4 Tbsp sugar
1/2 tsp cinnamon
1/4 tsp mixed spice

2 x 7g packets of dry yeast  
90g sugar  500g plain flour 
1 tsp salt 
1⁄2 tsp cinnamon 
1⁄2 tsp mixed spice    
300ml warm milk       
60g melted butter       
1 beaten egg
60g sultanas       
60g currants       
60g mixed peel

  • Preheat oven to 200 degrees Celsius 
  • In a bowl, combine yeast, sugar, plain flour, salt, cinnamon and mixed spice.
  • Mix with warm milk, melted butter and beaten egg.
  • Mix in sultanas, currants and mixed peel.
  • Cover and leave to proof in a warm place.  Shape into 12 buns and place closely together in a greased baking pan.  Cover and allow to rise until very light.  Pipe on crosses then bake for 15-20 mins.  Brush on glaze whilst hot.
  • For the crosses: Mix self-raising flour with cold water.
  • For the glaze: gelatine in water then add to saucepan with sugar, cinnamon and mixed spice and boil for 10 mins.
