Mango Fruit Cake 

(no butter, no sugar)

1 x 425 can Mango slices
500 gms assorted mixed fruit
½ cup water
½ teas  carb soda
1 ½  cups self-raising flour
2 eggs, lightly beaten

Combine unstrained Mango slices, mixed fruit and water in a large saucepan;bring to the boil and simmer a couple of minutes uncovered.

Put aside to cool, maybe ½ hour.

Stir in carb soda, then eggs,  put all flour in together and mix well.

Pour into greased pan, cook moderate oven 1 hour. Cool cake in pan.

*Note: I quite often put 2/3 cup chopped apricots or  dates in the saucepan first before the mixed fruit, I think I like the apricots better.
