Pumpkin Scones
1 tablespoon butter
3/4 cup sugar
1 cup cooked pumpkin (dry)
1 egg
1 teaspoon baking powder
2 cups self-raising flour
1 pinch salt
Method:
1. Beat butter and sugar together
2. Stir in well beaten egg and pumpkin with wooden spoon.
3. Add flour
4. Add milk if necessary (usually not)
5. Knead lightly in plain flour, cut out scones, place on tray
6. Bake in hot oven (200 degrees c) for 15-20 minutes.
