Self-saucing Chocolate Pudding

Serves: 4

Ingredients

1 cup self-raising flour
⅓ cup cocoa
½ cup caster sugar
½ cup milk
1 egg, lightly beaten
¼ cup butter, melted
½ teaspoon vanilla essence
½ cup lightly packed brown sugar
Salt

Method

1 Preheat oven to 180°C.
2 Grease 4 ramekins or small pudding bowls.
3 In a mixing bowl sift the flour, half the cocoa and a pinch of salt. Stir in the caster sugar. Make a well in the centre.
4 In a separate bowl combine the milk, egg, melted butter and vanilla.
5 Pour into the dry mixture and mix until smooth.
6 Spooon mixture into prepared ramekins and place on oven tray. Combine brown sugar and cocoa and sprinkle evenly over each pudding. Pour boiling water over the back of a spoon to fill each pudding almost to the top.
7 Bake for 20-25 minutes or until risen and firm to touch.

Recipe notes:

Let cool down for a few minutes as it will be incredibly hot. May be best to serve small children in a different bowl. Delicious with cream or custard, hot custard in winter.
